I lived in Utah for about 30 years. One of my favorite restaurants was "Frontier Pies". They were a chain famous for their pies. But, MY favorite meal dish was their Navajo Tacos. They consisted of Navajo Fry Bread covered with chili, lettuce, cheese, black olives, onions, and salsa. The fry bread was larger than the reference recipe, more like 8 inches in diameter. They went out of business, for some reason, as I REALLY tried to be supportive :). I really miss their Navajo Tacos!
You'll want to make sure to use a THICK chili, or it might make the fry bread soggy!
